We love pasta salad and this one is delish! Colorful, delicious and filling, this recipe is great for parties, picnics, work lunches and anytime meals or snacks - can also be made ahead of time (it’s even better the next day).

Ingredients

  • 250g / ½ lb. red lentil pasta (or any bean-based pasta)
  • 350g (1 jar-drained) Roasted red peppers, diced
  • 1 can chickpeas, drained
  • 1 can kidney beans, drained
  • 2 tomatoes, large diced
  • 1 cucumber, diced
  • 1 cup/128g olives, pitted
  • ½ red onion, diced
  • 1 tablespoon capers, small
  • 2 tablespoons pine nuts
  • Small handful fresh basil leaves, rough chopped
  • Small handful parsley leaves, rough chopped
  • 3 cloves garlic, diced
  • 2 tablespoons red wine vinegar
  • 1 teaspoon pepper
  • 1 tablespoon olive oil (optional)
  • Salt, to taste (optional)

Directions

  1. Cook pasta according to directions – boil until al dente – drain and rinse with cold water.
  2. On med-high heat, heat a large sauté pan until hot – add diced onion, pine nuts, and olive oil if you're using it) and sauté for 2 minutes. Then add tomatoes and sauté for another minute until onions are translucent and pine nuts begin to brown. Remove from heat.
  3. In large mixing bowl add cooked pasta, sautéed mixture and remaining ingredients and gently toss to mix well. Serve.
