Grilled Chikin and Cabbage Salad with Almonds and Mint

This dish is over the top delicious! Grilling adds a ton of flavor and if you've never grilled cabbages, you've missed out! Mix up the vegetables by swapping out the cabbage for broccoli, broccolini, cauliflower or zucchini and peppers.

Ingredients

    Salad
    • 1/2 red cabbage, cut in 3 wedges
    • 1/2 Napa cabbage, cut in 3 wedges
    • 6 pieces of plant-based chicken, or tofu slabs (you can use our Simple Baked Tofu)
    • 2 teaspoons olive oil
    • Sea salt
    • Fresh mint and basil sprigs
    • 1/4 cup almonds, toasted and chopped
    • Thai chilies, sliced thin (optional)
    Sauce
    • 1/2 cup almond butter, peanut butter or tahini
    • 1 tablespoon ginger, chopped
    • 3 tablespoons rice vinegar
    • 3 dates, pitted
    • 1/2 teaspoon sea salt
    • Water to blend

    Directions

    1. Pre-heat the grill to high.
    2. Once the cabbages are cut into wedges, rub the wedges and the plant-based chicken with olive oil. This will prevent them from sticking while grilling. Sprinkle with sea salt.
    3. Place on grill and allow to grill on each side for 3-4 minutes. Remove onto tray.
    4. In a blender, blend all ingredients in the sauce until smooth. Add water as needed to allow to blend.
    5. Chop grilled cabbages and plant chicken and assemble on plates. Garnish with chopped almonds, fresh mint and basil.
    6. Drizzle each salad with almond sauce.

    Tips

    • Make it extra spicy by adding fresh chilies to the sauce.
