This Fire Roasted Tomato Soup is wicked good food! Packed with veg and sweet potato even, we jammed as many veggies as we could into this one. It’s a hearty meal in itself or great as a side dish. Take it for lunch, drink it cold- this recipe is a fave to keep on hand. You got this!

Ingredients

  • 1 L or 4 C tomato juice (low sodium)
  • 450g (1 jar) roasted red peppers with juice
  • 2 stalks celery, rough chopped
  • 1 lg carrot, rough chopped
  • 1 lg white onion, cut into 1/6’s
  • 1 lg sweet potato
  • 3 cloves garlic, rough chopped
  • 1 bay leaf
  • ½ t Black pepper
  • Salt, to taste (optional)

Directions

  1. Preheat oven to 400ºF/204ºC.
  2. On baking paper-lined baking sheet add chopped onion, celery, and carrot.
  3. Add the whole sweet potato, unpeeled, and bake the whole tray for 25-30 minutes until all veg is golden brown and sweet potato is tender and is easily pierced with a fork.
  4. Remove from oven and let cool. Peel sweet potato and discard the skin.
  5. Heat a large pot on med-high heat, add the roasted veg, raw garlic, roasted red peppers with their juice, black pepper and salt (optional).
  6. Sauté for 3 minutes and remove from stove.
  7. Let cool for 10 minutes then add mixture to high speed blender and blend until smooth.
  8. Add cooked sweet potato and tomato juice. Depending how big your blender is you may want to do in two stages.
  9. Once blended, add back into the pot with the bay leaf and simmer on low heat for 15 – 20 minutes.
  10. Remove from stove and serve with whole grain bread.

Tips

  • MAKE IT WICKED! Sub tomato juice for V-8 juice (low sodium). For thinner consistency add some veg broth. Add a can of beans and tofu for protein boost. For a bit of heat add jalapeno or fresh chilies. For creamy tomato soup add 1 cup of soaked cashews and 2 C of water when blending.
