Ingredients

    Brownies
    • 1 cup walnuts, raw (reserve the 1/2 cup for topping)
    • 1 cup pecans, raw
    • 1/2 cup hemp seeds, hearts
    • 2 1/2 cups dates, pitted – if they are not soft, soak them in warm water to soften
    • 3/4 cups cocoa powder, unsweetened
    • Pinch of sea salt
    Frosting:
    • 1/4 cup peanut butter or almond butter
    • 1/4 cup maple syrup
    • 1/2 cup cocoa powder, unsweetened
    • 2 T-1/4 cup soy milk, or other non-dairy milk of your choice
    • 1 teaspoon vanilla extract (or one bean scraped)
    • 1 tablespoon soy sauce or tamari, low sodium
    • 1/4 teaspoon sea salt (optional)

    Directions

    1. To prepare the brownie mixture: using a food processor, place 1/2 cup of the walnuts, pecans, hemp seeds, cocoa powder, and sea salt (if using) and pulse until fine mince.
    2. Slowly drop in the pitted dates while continuing to pulse until all dates are incorporated into the batter. The mixture will be quite thick and balled up.
    3. Line a small brownie pan (9 in x 9 in) with parchment paper. Scoop out the brownie mixture and press into the pan, spreading evenly. Place aside.
    4. For the frosting: using a food processor, add all ingredients to a food processor and blend until smooth.
    5. Spread frosting over the brownies covering entirely (use a rubber spatula or spoon).
    6. Sprinkle the remaining chopped walnuts over the top of the brownies.
    7. Wrap in plastic and place in freezer for a minimum of an hour to firm up quickly.
    8. Remove from freezer, slice and serve. Alternatively, these could be stored in the refrigerator.

    Tips

    • The best way to slice the brownies is to fill up a tall jug with really hot water, place your slicing knife into the hot water for a few seconds and then remove the knife, wipe away the water, and then make a cut into the brownies. Repeat this step for every cut you make — it will ensure a much cleaner cut.
    • Try adding dried cherries and a pinch of cayenne into the brownie mix for a brownie with a kick.
    • To boost the protein content, cut the cocoa in half and use your favorite chocolate protein powder instead.
    • Fold in raw cacao nibs or plant-based chocolate chips into the brownie mix right before pressing into pan for a more decadent version.
