Ingredients

  • 3 x tofu blocks, extra firm, hand broken into bite size pieces
  • 1 cup all-purpose flour
  • 1 cup rice flour or corn starch
  • ½ cup bread crumbs, fine
  • 4 tablespoons fresh parsley, chopped fine
  • 1 tablespoon ground sage
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon granulated onion
  • Fresh ground black pepper, to taste
  • Salt, to taste
  • Vegetable oil, to coat the pan

Directions

  1. Make sure you have the firmest tofu you can purchase. Carefully tear the tofu into bite-sized pieces and place into a large bowl.
  2. In a medium sized bowl add the rest of the ingredients (minus the oil) and mix well.
  3. Add each piece of tofu to the seasoned flour, coating completely and evenly on all sides.
  4. In a medium-sized cast iron pan (or sauté pan) add enough oil to cover the bottom (about 1 centimetre deep.) Place pan on medium-high heat.
  5. When the oil is hot, add 6-7 pieces of breaded tofu, pan frying each side until completely golden brown.
  6. When the pieces are done, remove from oil and place on a paper towel lined plate to dry/remove excess oil.
  7. When ready to serve, preheat the oven to 200ºC/400ºF.
  8. Place the crispy tofu onto a baking sheet and roast in the oven for 15 minutes.
  9. Remove from the oven and serve with gravy and all the fixings.
