Pressed Portabella Quesadillas

Mexican style food is as delicious as it is comforting! These Pressed Portabella Quesadillas quesadillas can be prepared with plant-based cheese for that sticky decadent texture or as they are for a healthier option.

Ingredients

  • 8 pack of corn/whole grain tortillas (8 inches)
  • 5 portobello mushrooms, large stems removed
  • 1 can white beans, drained
  • 1 large onion, diced
  • 250 g sweet potato, whole roasted, peeled (optional)
  • 3 tablespoons Smoky BBQ Sauce (optional)
  • 2 tablespoons pickled jalapeno, diced
  • 1 tablespoon BBQ seasoning
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon black pepper
  • Sea salt, to taste (optional)
  • ½ handful coriander/cilantro, roughly chopped

Directions

  1. Preheat oven to 400ºF/204ºC.
  2. On a baking paper-lined baking sheet place the mushrooms face up and dust with BBQ seasoning. Roast for 15 minutes until soft and liquid begins to form in the cap. Remove from oven, flip mushrooms over to cool, then slice into thin strips.
  3. In a large mixing bowl, add the beans, roasted sweet potato, BBQ sauce if using and mash (a potato masher is ideal) to a rough consistency. Add the jalapeno, cumin, chili powder, black pepper and a pinch of salt (at your discretion).
  4. Heat a skillet on med-high heat until hot, add the diced onion and sauté for 2-3 minutes until the onion is browned (spray oil optional), remove from pan and stir through bean mixture.
  5. In each tortilla flatten 2-3 generous spoonfuls of mixture to cover the tortilla evenly, add sliced mushrooms and then cover with a second tortilla and gently press together. Do this 4 times.
  6. Heat another skillet on med-high heat and gently place each filled tortilla onto the hot surface to sear each side about a minute each side.
  7. Add each seared, filled tortilla to baking sheet (layering on top of each other is fine) cover with foil and heat in oven for 10 minutes. Slice into wedges and serve with fresh salsa, jalapeno and classic sour cream.
